Kale Miso soup with Maitake Mushrooms

  1. 32 oz. of any broth (I'm using my homemade beef broth)

  2. 1 bunch of kale - chopped

  3. 1 medium shredded carrot

  4. 3 garlic cloves - minced

  5. 1 cup of maitake mushrooms

  6. 1 small onion - chopped (not shown on the image)

  7. 1 tbts of Miso (more if you desire)

  8. 1 tsp turmeric powder

  9. Salt and pepper to taste

  10. 1 tbsp of coconut oil


  1. 1 cup of chopped dill, cilantro, parsley,

  2. 1 scallion - chopped

  3. 1 tsp of rosemary


Melt coconut oil in a skillet. Add the Onions and a Pinch of Salt, slightly caramelize onions, carrots and garlic.

Use at least 48 oz. pot to bring beef broth to a boil, add kale, mushrooms, caramelized onion, carrots and garlic, rosemary, turmeric, salt, pepper. Lower the heat to small and let it simmer for 10-15 min. Before turning off add 1 tbts of Miso and chopped fresh herbs. Let it sit for 5 minutes after turning off
