CRUCIFEROUS VEGETABLE DETOX SALAD WITH BEETS TAHINI DRESSING


Ingredients:


This will make 4 large portions







1 bunch kale - chopped. I'm using dinosaur kale









1 large bell pepper - chopped







0.5 bunch cilantro -chopped

0.5 bunch dill - chopped

0.5 bunch parsley - chopped

3-4 scallions - chopped








1/4 red cabbage - thinly sliced








1 small head cauliflower









0.5 cup pumpkin seeds








Directions:


Pour all ingredients in to a large bowl and mix.





Dressing:






1 cup plant based milk










1 small beet - sliced








1 lemon - juice freshly squeezed








Salt and pepper to taste








5 cloves of garlic








2 table spoon of raw tahini






Directions:


Add all ingredients in to blender admix till it reaches creamy consistency.

Pour over your salad and enjoy.
