Raw Vegetable Soup with Oyster Mushrooms

Ingredients:


3 medium size Carrots

Half of each Bell pepper (red, yellow)

Cauliflower

Quarter of medium size Beet

2 Garlic clove3

1 inch Ginger thumb

2 Celery stocks

Juice of a 1 small Lemon (freshly squeezed)

5 tbts of Coconut cream

1 tsp of Salt (add more if desired)

1/2 tsp of black Pepper (add more if desired)

2 tsp of Paprika powder

1 tsp of Turmeric powder


Toppings:

Leaks

Dill, cilantro, parsley

Oyster mushrooms

Black pepper


Directions:


Place all the ingredients it to the blender (I use Vitamix). Blend it to creamy consistency for 2-3 minutes. Soup will be warm and ready to eat. If you desire have it warmer blend more for a minute or more. Garnish with herbs, oyster mushrooms and black pepper.
